Easy Hot Cross Buns Recipe

A quick and easy hot cross bun recipe to try this Easter! No waiting around for proofing, you can be eating them fresh in under 30 minutes!

This recipe uses Greek yoghurt to help lower the fat (so you can still have plenty of other treats this Easter!), up the protein to leave you feeling satisfied and no refined sugar to help avoid some sugar crashes.

Ingredients

  • 400g Greek yoghurt

  • 400g plain flour (or 320g flour and 80g oat flour for more fibre)

  • 2½ tsp baking powder

  • ½ tsp baking soda

  • 2–3 tbsp milk

  • 2 tsp cinnamon

  • ½ tsp mixed spice 

  • ¼ tsp nutmeg

  • Zest of 1 orange

  • 20-30g maple syrup

  • Monk fruit extract to taste (I use Treason and did 5 scoops = 5/100th tsp )

  • 1 tsp vanilla

Add-ins

  • 40-60g raisins/sultanas

Cross

  • 2 tbsp flour

  • 2 tbsp water

Method

  1. Preheat the oven or air-fryer to 180°C fan

  2. Mix all ingredients (except for add-ins) together in a bowl

  3. Combine into a soft dough (don’t overwork)

  4. Fold in fruit

  5. Shape into 8–10 buns

  6. Place close together

  7. To make the crosses. Mix flour and water in a small bowl until a paste like texture. Put mixture into a small ziplock bag and cut 1 small tip off the bottom corner. Pipe crosses onto buns.

  8. Bake 10-15 mins

  9. Brush with a light coating of maple syrup while warm
